Don't Shoot the Food ? Max Payne Memorial Day Edition ...

As of this writing, I?m about ten minutes into the last chapter of Max Payne 3. Good people of Brazil, I apologize for shooting up your fine country. Good people of Hoboken, I doubt you can tell the difference. I?m not going to get much into Max Payne 3, I?l save that for a post next week, but I will tell you that I am enjoying it as much as the original Max Payne and more than Max Payne 2, a game I barely remember. It is definitely one of Rockstar?s most focused games, which can be a detriment if you don?t like what they?re focusing on, but given that I enjoy a good slo-mo gun battle, I?m quite happy. It also doesn?t hurt that I love most of what comes out of Max?s mouth.

Aside from painkillers, I haven?t seen Max eat anything during his ten hour journey, but that doesn?t mean that we have to ignore Brazil?s fine cuisine. To celebrate Memorial Day here in the states, a day typically celebrated with cookouts and barbecues, I?m giving you a main course, a side item and, for my good buddy Max, a Brazilian cocktail. The food comes from The Barbecue! Bible, by Steven Raichlen, a cookbook that I?ve used extensively. Raichlen traveled the globe looking for barbecue and grilling recipes and while he focused on food found mainly in?Rio de Janeiro, the side item could very easily be found in S?o Paulo. I?m not saying these are 100% authentic Brazilian recipes, what with me never having been to Brazil, but it?s a good place to start before taking Max on your very own blood soaked tour of Brazil.

Brazilian Beer Chicken

Ingredients
1. 2 cups Brazilian beer such as Antarctica or Xingu Black Beer ? these are the Brazilian beers that Raichlen mentioned, however you can use whatever beer floats your boat
2. 1/2 cup vegetable oil
3. 1/2 cup Dijon mustard
4. 1 tbl sweet paprika
5. 1 tsp black pepper
6. 1 medium onion, thinly sliced
7. 12 garlic cloves, thinly sliced
8. 2 bay leaves
9. 1 chicken, 3.5 to 4 lbs, quartered
10. Kosher salt

Cooking Steps
1. Combine the first five ingredients (beer through pepper) in a large bowl (plastic or glass) and combine well.? Stir in the onion, garlic and bay leaves.
2. Rinse the chicken under cold water and blot dry. Soak the chicken pieces in the marinade for at least six hours, but two days if possible.
3. Preheat your grill so that half of the grill is at medium heat and half is at high heat. Oil your grill grates.
4. Take the chicken out of the marinade and blot dry, reserving the marinade. Season the chicken with salt and grill, skin side down on the hot part of the grill for three to five minutes. Baste with the marinade several times.
5. Move the chicken pieces, still skin side down, to the medium section and grill until the skin is fully browned, five to seven minutes. Continue basting with the marinade while cooking.
6. Turn the chicken pieces and grill back on the hot side for three to five minutes.
7. Return the chicken to the medium section and grill until fully cooked.
8. Once done, serve immediately.

Traditional Tutu ? Mineira?has more stuff in it, greens, sausage, what have you, and Raichlen mentions that this one is toned down. Makes sense given that it?s a side dish. If you want a more traditional version, Google is your friend, as is fluency in Portuguese.

Ingredients
1. 4 strips bacon
2. 1 medium onion, finely chopped
3. 4 garlic cloves, minced
4. 1/4 cup chopped Italian parsley
5. 1 bay leaf
6. 4 cups cooked black beans or two 15 oz cans
7. 1/2 to 1 cup reserved bean cooking liquid or chicken broth
8. 1/4 tsp hot sauce
9. 3 to 4 tsp manioc flour (available at Brazilian or Portuguese markets, substitute toasted bread crumbs in a pinch)
10. Salt and pepper to taste
11. 2 hard boiled eggs, coarsely chopped

Cooking Steps
1. Cook the bacon in a skillet until lightly browned, about five minutes. Pour off all but two tbl bacon fat.
2. Add the onion, garlic, half of the parsley and the bay leaf to the bacon fat and cook for four minutes.
3. Add the beans, 1/2 cup of the cooking liquid/broth and the hot sauce to the pan and simmer for five minutes.
4. Discard the bay leaf and then mash half of the beans with either a potato masher or the back of a wooden spoon.
5. Stir in 3 tsp of the manioc flower and simmer the beans, uncovered for three minutes. If the beans get too thick, add more liquid. If it?s too thin, add the remaining flour.
6. Season the beans as needed and serve immediately.

The?caipirinha is Brazil?s national cocktail, a simple mix of?cacha?a, sugar and lime juice. You?ll need a muddler thing-a-mabob so splurge the couple of bucks and make Brazil proud.

Ingredients
1. 1 2/3 oz.?cacha?a
2. 1/2 of a lime, cut into four wedges
3. 2 tsp crystal sugar (refined works if that?s all you have)

1. Place the sugar and limes in the bottom of an old fashioned glass and muddle like there?s no tomorrow.

Duck Lake fire sweeps across Michigan's Upper Peninsula

A wildfire that started Wednesday in Michigan?s Upper Peninsula is on track to become the state?s third-largest wildfire in more than 140 years.

Dry conditions, high temperatures, and strong winds in the region are preventing fire officials from suppressing a blaze in Luce County, which encompasses Lake Superior State Forest. The Michigan Department of Natural Resources says the fire can be tracked to a lightning strike in the area. On Thursday, the blaze spread across 9,500 acres, intensifying Friday when the fire burned a total of 17,000 acres, or more than 26 square miles.

Officials say the fire is spreading by the tops of jack pines.

No injuries are reported to date. Evacuations have been ordered. State officials say six buildings were destroyed and over 40 more are under threat.

The state department of natural resources reports that by May 13, before the current blaze they are calling the Duck Lake fire, a total of 239 wildfires have burned over 1,800 acres in the state, destroying 25 buildings. By the same date last year, a total of 80 wildfires are on record.

May marks the end of Michigan?s three-month wildfire season, although blazes are known to ignite at other parts of the year. This recent season posed significant risks considering the warm summer temperatures that set records for much of March and April.

The state estimates that between 8,000 to 10,000 wildfires burn each year, but they are often small, covering between five to 50 acres.

In addition to the Duck Lake fire, fire crews also battled the Seney fire, a wildfire that started Monday that ended up destroying as many as 3,200 acres, or five square miles, in the Seney National Wildlife Refuge, west of the Duck Lake fire. The refuge, which covers about 95,000 acres, remains closed. No injuries or building damage is reported, officials said.

The last significant wildfire in Michigan was the Sleeper Lake fire of 2007, which burned 18,000 acres, also in Luce County in the Upper Peninsula. At the time, the blaze was registered as the third largest in the state since 1881, the year when 1.1 million acres were destroyed in the ?thumb? region of the Lower Peninsula of the state, resulting in 282 dead.

The second most damaging wildfire in the state took place in 1980 near Mio, Mich., which spread over 25,000 acres, destroying 44 homes and resulting in one death.

Improving young people?s access to sexual health information and services is critical. Young people represent an increasing proportion of the world population and without information and services, are at high risk of sexual and reproductive health-related morbidity and mortality.

Improving young people?s access to information and to sexual and reproductive health is called for in a range of international conventions and initiatives including:

  • Millennium Development Goal 3 (2000): promoting gender equality and empowering women;
  • Convention on the Rights of the Child (1989): giving children a say in what should happen to them and protection from harm;
  • Convention on the Elimination of All Forms of Discrimination Against Women (1979): eliminating discrimination against women in matters relating to marriage and family relations;
  • ICPD Programme of Action (1994): protect and promote the rights of adolescents to reproductive health education, information and care; greatly reduce the number of adolescent pregnancies; support education and counselling of adolescents on gender relations and equality, violence, responsible sexual behaviour and family planning, family life, and STI/HIV prevention.
  • Commission on Population and Development (45th session, 2012): resolution calling for full recognition of young people?s human rights, including gender equality and the highest standards of sexual and reproductive health.

Much work around young people?s sexual health focuses on specific health outcomes and has been promoted by governments and NGOs on public health grounds. In the context of entrenched conservative opinion, advocating for sexual health education or contraceptive and sexual health services using public health arguments may be an effective way to build consensus across different cultural, political and religious perspectives. Mainstream opinion too may be more receptive to meeting public health objectives, such as reducing STIs and preventing teen pregnancy, than to education or services that acknowledge ?normal? adolescent sexuality.

However, while health-based arguments may be less contentious, they risk marginalising the right of young people to good education on sex and relationships, contraception and sexual health care ? as well as the role of sex education in promoting young people?s rights. They can also lead to a narrow curriculum, bypassing issues of gender inequality and discrimination on the basis of sexuality, and may problematise any adolescent sexual behaviour at all.

Increasingly, young people themselves are calling for a rights-based approach to sexual health and rejecting the idea that they should be passive recipients of a sex education that aims to define and control the boundaries of what is acceptable, or that aims to impose social and cultural norms which they perceive as belonging to their parents? generation. Instead, they are calling for sex education that eliminates shame and stigma, not reinforces them. They reject being represented as passive and uncritical consumers of ?sexualising? media messages and pornography, rather than as active decision-makers who can be trusted to unpick and make sense of the multiplicity of messages and images they are bombarded with through the television, music and advertising, and mobile technologies.

Young men as well as young women have sexual and reproductive issues and need information and services. They want to participate in conversations about pregnancy and other topics they have traditionally been excluded from, including issues of consent and coercion, and understand their rights and their responsibilities. Young men and women both question pervasive sexual identity and gender stereotypes.

This journal issue aims to explore the changing language and culture around young people?s sexual relationships and sexual health, as well as the gap between what young people want and need, what young people are told they need, and what they are actually receiving.

The following are just some of the issues we would be interested in receiving submissions on:

  • How do adolescents and young people see their own and others? sexuality?
  • How can sex education support men to participate in healthy sexual relationships?
  • What is adolescent sexual experience today?
  • What should comprehensive sex education include?
  • Linking sex education and sexual and reproductive health services

Submissions need not be academic papers. They can be discussion and opinion pieces; reports of interviews with young people, sex education teachers, or sexual health service providers; or about young people?s experiences. They can describe/critique sex education programmes, health and safer sex promotion, or law, policy and regulatory issues. The company currently is one of four firms in which NASA is investing almost $270 million to develop human-spaceflight capabilities in the second phase of its commercial-crew development project. NASA is relying on commercial providers to ferry crews and cargo to and from the space station so that the agency can focus its human-spaceflight efforts on exploring space beyond low-Earth orbit, the space station's domain.

SpaceX's entry into that competition is a human-rated version of the Falcon 9 rocket, which lofted Dragon, and the Dragon craft. SpaceX designed Dragon from the outset to ferry people as well as petri dishes.

Thursday's activities would have wrapped up this mission in a sequence of three demonstration flights NASA originally envisioned for SpaceX. Efforts to dock with the station would have been the third mission. But the company was able to show that the two missions could be combined.
